I found this recipe in a magazine many years ago (actually, maybe my husband found it). It sounded good, so I decided to give it a try. WELL…it’s my husbands ABSOLUTE FAVORITE MEAL of ALL MEALS!!! Right up there! On that plate!! Broccoli, baked potato and Boursin Stuffed Chicken!!! He’d probably eat it every day if I made it for him, but I don’t. Ha! I don’t want to spoil him too much, so I save it for special occasions…or when I want something from him… or when he begs me to make it…hehehe! Try it. You’ll probably LOVE IT!
Boursin Stuffed Chicken
Ingredients:
2 whole chicken breasts – halved
1 – 5oz. pkg. boursin cheese, softened
1 Tbls. flour
1/4 c. shredded carrots
1/4 c. chopped walnuts
1/4 c. chopped parsley
1/3 c. bread crumbs
2 Tbls. parmesan cheese
2 Tbls. melted butter
Directions:
Pound 4 chicken breast halves thin. Mix boursin cheese and flour in small bowl. Add carrot, walnuts and 2 Tbls. parsley. Mix well to combine. Place 1/4 of the cheese mixture on each chicken breast and roll to enclose cheese. Brush chicken with melted butter.
In a small bowl, combine the remaining parsley with the bread crumbs and parmesan cheese. Then roll the butter coated chicken in the bread crumb mixture.
Bake the chicken on a sheet pan at 350 for 40-45 minutes.
