Copycat Hotel Waffles

Who doesn’t love a good waffle? It’s a nice treat for breakfast or brunch. Warm waffles with butter and maple syrup. Blueberries or strawberries on top. Maybe a little whipped cream? The possibilities are endless. Until now, I haven’t been able to find a really good waffle recipe…and trust me, I’ve tried quite a few. They’re never as good as the waffles you get at a hotel. You know…the kind you make yourself at those hotels that include a breakfast buffet with your stay. I’ve tried different size waffle irons, different shape waffle irons (I have FOUR!), it doesn’t seem to matter. They’re just never that good…until now. I found one! They’re chewy, moist, flavorful, and if my waffle irons got a little hotter, they’d probably be crispy, too! I haven’t achieved the crispy part, and I don’t plan to buy another waffle iron ;), but this waffle recipe is definitely a keeper. YUMMY!!

Makes about 6 large waffles (depending on your waffle iron)

Copycat Hotel Waffles

Ingredients:

6 eggs
1/3 cup vegetable oil
1 cup milk (I used buttermilk because I had some in the fridge)
1 teaspoon vanilla
1/3 cup sugar
2 cups cake flour (A MUST! Use cake flour for crispier waffles)
1/2 teaspoon salt
1 tablespoon baking powder

Directions:

Preheat your waffle iron on high. The hotter the better. The high heat will make the outside crispy and the inside moist. Even if they’re not crispy on the outside, they’ll still be really good!
Beat together the eggs, oil, milk, vanilla, and sugar. Mix together the flour, salt, and baking powder and mix into the wet ingredients using a whisk or hand mixer. Normally, it’s best to not over mix waffles, but I mix these until smooth. I think it makes them more chewy. Cook them according to your waffle iron’s instructions.
