Guacamole

I never used to like guacamole. I tried it many times when we’d go out for Mexican food (my husband’s favorite), but the stuff they serve in most of the restaurants we frequent just doesn’t have much flavor. Well…my feelings about guacamole have changed. About four or five years ago, I made this recipe for my son. He liked it…and I LOVED IT!

Yes, this recipe has turned me into a guacamole fan!!

Guacamole

1 avocado
1 lime
1/4 tsp. kosher salt
scant 1/4 tsp. cumin
scant 1/4 tsp. cayenne pepper
1/4 cup onion, finely diced
1/2 – 1 Roma tomato, diced
1/2 Tbs. chopped cilantro
1/2 clove of garlic, grated

Scoop avocado into a bowl. Coat with about 1 Tbs. of lime juice. Mash the avocado (I like to keep it a little chunky). Add the salt, cumin, cayenne and mix to combine. Stir in the remaining ingredients.
Taste (I like a lot of lime in my guacamole and sometimes add more.) ENJOY!
