Mom’s Chili

I hated chili for a long time. My mother used to make it when I was a kid…hated it! When I married my husband, he would get it at Wendy’s because I never made it at home. That was good because I HATED IT!! Then one day my grown up taste buds kicked in and I decided to give it another try. And guess what? I LIKE IT NOW:) Not sure why, but I do. So now I make it…and I’ve been told its pretty good, too. This is the easiest recipe ever. If you have a big pot, a wooden spoon and a can opener you’re half way there! Of course, you’ll need a few ingredients from the grocery store, but it comes together so fast, you’ll be eating a hot bowl of chili in no time. My family loves my chili as much as I do. Hope you do too!

Mom’s BIG Pot of Chili

Ingredients:

2 lbs. ground chicken or beef

1 large onion, chopped

2 cans Bush’s Chili Magic Chili Starter

2 14.5 oz cans petite diced tomatoes

1 can Rotel diced tomatoes and chilies – original flavor

3 cans of beans (any combination of black beans and kidney beans)

1 small jar of salsa (medium or hot, your choice)

1 heaping Tbl. of chili powder

1 heaping tsp. of cumin

 

Directions:

In a large pot, sauté the chopped onion in 2 Tbls. of veg. oil over medium heat until the onion starts to sweat. Add the ground chicken (or beef) and continue to cook, chopping and stirring the meat until it’s no longer pink. When the meat is fully cooked, add all of the remaining ingredients. Stir. Cover and cook over medium low heat until hot and the flavors blend, 20 minutes or more, stirring occasionally. Taste for seasoning. This makes a lot of chili, but it freezes well. Great for a quick lunch or dinner.
