Tuna salad sandwiches were always a favorite lunch for my family when my sons were growing up, and although I don’t make it as often as I used to, my husband (who eats a sandwich at least 5 times a week) does request my tuna from time to time. When my youngest son was visiting from Chicago recently, one of his requests for lunch was tuna. He also wanted to know how to make it. I never really had a recipe…just threw some stuff in a bowl and mixed it up. Figured I better do some measuring the next time I made it. So this is for you Jake…Mom’s Tuna Salad. Tuna Salad
4 – 6oz. cans of tuna, packed in water
1/4 tsp – 1/2 tsp kosher salt, to taste (if using table salt, use half the amount)
1/4 cup finely diced onion
1/4 cup finely diced celery
1/4 – 1/3 cup sweet relish
1/2 cup mayo
Drain the tuna and put in a medium size bowl. Flake the tuna with a fork so no big clumps remain. (If you have a cat, or 2, 3 or 4, and they’re hanging around, I usually have to give them a little taste.) Sprinkle the salt over the tuna and stir. Then add the onion, celery and sweet relish, stir. Add the mayo and mix to combine. Now….make yourself a sandwich!
